It was my dream from, a long time wherein I wanted my own restaurant or kitchen where I cook the food and serve people and with nam’s kitchen I want to begin my journey of fulfilling my dream and make people relish an amazing cuisine.

 

I’d like to share a little more about my back story. My cooking story started long back. When my mother died in 1980. That time I was with my father and brother, and I was around 11 years old, and we were an individual family and there was no help for us in cooking food. I had no idea about cooking since I was very small but slowly, I started learning to cook food. Sometimes we used to eat uncooked, raw, or tasteless food. In 1980 we did not have the luxury of having online services or food from outside. My father used to cook, and I was his helping during those days.

 

Once I started cooking, I began to develop interest in it, and I started preparing simple Indian family food like rice pulses and vegetables. Few years later, I went to my Nani’s in Lucknow.

She was a fabulous cook like my mother. I had less time with my mother, so I couldn’t learn much from her, but I learnt a lot from my Nani. She was a specialist in cooking non-veg food and whatever Awadhi dishes I cook I learned it from her. I used to help her in cooking and along with that I learnt to understand dishes and methods and I used to enjoy it a lot and that’s how I gained interest and kept learning. Post that I joined cooking class in Lucknow and learned various things from there as well.

 

It was until I got married in a Bihari family and my mother-in-law originated from Bihar while we were based out of Jharkhand so that helped me in understanding the Bihari and Jharkhandi taste, spices, preparations, and the food itself.

 

Before wedding I didn’t know how to make roti or parathas. I used to cook them with a basic idea of eating, but an actual top-class roti and parathas is one which is soft and melts quickly in mouth this I learned from my mother-in-law. She also cooks amazing food, and she has the taste in her hand. So, this how my journey began and then I started to do research on food created few own dishes and made fusions, travelled various places, and kept on gaining knowledge of what an actual central eastern Indian food tastes like.

 

Finally realising my dream, I really want everyone to have a bite of my personal spins through these cuisines.
